Today’s Spring brunch is a flashback to my mom’s baked oven omelet. Of course, this is a dish that was loved by the whole family. Now, my family is also able to enjoy it. The great thing is you make it ahead of time and placed in the fridge. You can have it for Easter or use your leftover Easter ham to make it.
