Easy Blueberry Waffles

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 Tbsp sugar
  • 1 1/2 cups fresh blueberries
  • 2 cups buttermilk
  • 2/3 cup vegetable oil
  • 2 large eggs, lightly beaten
  • 2 tsp vanilla extract

Instructions

  1. In a medium mixing bowl, combine the flour, cornstarch, baking powder, baking soda, salt and sugar.  Whisk together to blend.
  2. Add in the buttermilk, oil, eggs and vanilla. Mix just until incorporated and few lumps remain.
  3. Preheat a waffle iron.  Fill waffle wells and cook according to the manufacturer’s instructions.  Cook until crisp and golden.  I got 5 waffle for my waffle maker.
