Cheese and Vegetable Soup

Ingredients

  • 1 cup flour
  • 1 cup butter
  • 2 (14 oz) can chicken broth
  • 4 cups milk
  • 2 tsp salt
  • 1 (15 oz) jar Cheese Whiz
  • 1 (10 oz) bag frozen peas
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 1/2 onion, diced
  • 1/2 cup water

Instructions

  1. In a large soup pot, melt butter and whisk in the flour. Cook for 2 minutes.
  2. Add in the chicken broth and milk. Bring to a boil and cook for 2 minutes until thickened.
  3. Remove from the heat and mix in the Cheese Whiz until melted and combined. Then mix in the frozen peas and set aside.
  4. In a sauce pan, add the carrots, celery, onion, and water. Bring to a boil then simmer for 15 minutes until vegetables are tender.
  5. Mix in the vegetables and heat until warm. Serves 8.
