Beef Fajita Skillet


Units Scale
  • 1 lb ground beef
  • 1 (14 1/2 oz) can diced tomatoes with chipotle, undrained
  • 1 (14 1/2 oz) can beef broth
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/2 tsp garlic powder
  • 2 cups uncooked instant brown rice
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 cup shredded cheddar cheese


  1. In a large skillet, brown beef until fully cooked. Drain off any excess grease.
  2. Mix in tomatoes, broth, chili powder, salt, and garlic. Bring mixture to a boil.
  3. Then add in the rice and sliced peppers. Stir to combine and reduce to a simmer. Cover and cook for 8-10 minutes until liquid is absorbed.
  4. Remove from heat and sprinkle with cheese. Cover and let sit until cheese melts, then serve. Serves 6.
