Banana Bread French Toast

  • 3 eggs
  • 1 cup milk (I used skim)
  • 1 tsp vanilla
  • 910  slices of banana bread, from a large size loaf sliced 1/2 inch thick
  • 3 bananas, optional
  • canola oil


  1. Toast all the slices of banana bread in your toaster.  You may want to lay the toaster on it’s side to allow you to carefully remove them from the toaster and prevent to slices from falling apart.
  2. In a shallow bowl, whisk together the eggs, milk, and vanilla until well blended.
  3. Carefully dip each side of the toasted banana bread slices in the egg mixture.  You just want to lightly coat each side.  Then fry in a skillet coated with canola oil over medium heat.  Cook until each side is crisp and golden brown.
  4. Serve topped with syrup and banana slices if desired.
