20 Minute Creamy Tomato Soup

Ingredients

Scale
  • 1/4 cup butter
  • 1 tsp minced garlic
  • 1/4 cup flour
  • 3 Tbsp fresh chopped basil or 1 tsp dried
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 tsp basil pesto
  • 2 1/2 cups milk
  • 1 (28 oz) crushed tomatoes
  • 3 Tbsp tomato paste 
  • 1/2 cup grated parmesan

Instructions

  1. In a stock pot, melt butter. Add garlic and cook for 1 minute. Add flour and whisk to combine.
  2. Add in basil, sugar, salt and pesto. Cook and stir 1 minute.
  3. Add in milk and whisk until combined. Cook over medium heat until thickened, stirring often.
  4. Add in crushed tomatoes, tomato paste, and Parmesan cheese.  Stir until combined.
